Kicking myself in the butt...

My adorable little daughter had her first encounter with ladybugs today. She was so fascinated with them and loved when they'd crawl on her chubby little fingers. Sadly, I have no pictures of this cuteness overload because I'm an idiot. I left my camera at my mom's house down in Florida. She went to the post office on Monday, to send it via priority mail. Well, she insured it too, meaning I have to sign for the package. Stupid me forgot that little tidbit and ran errands today during our normal mail delivery time, and sure enough, there was a little peach slip in my door saying to go pick up my box tomorrow at the post office. TOMORROW! Do you think that Sophia will be that cute with ladybugs ever again? NO!

*bangs head on desk*

Don't say panties!!

My little princess is starting to use the potty! Yesterday I only changed ONE diaper (after naptime) and the rest of the day she went on the toilet like a big girl!! I'm so thrilled- neither one of the boys was potty trained until they were 3. Sophia's not even 2 yet! I know we're just beginning, but I am still excited. So today while we were out running errands, I let her pick out some big girl panties. She picked these cute little things (obviously in a smaller size!).Hubby came home for lunch and I told him that I bought her some panties to wear around the house and he gave me the infamous "Bobby look" (one raised eyebrow) and said "Panties??" I nodded, and asked him what the big deal was. They were only $3.50, so it's not like a dropped a ton of money on them. He just kept looking at me with a quizzical expression. Clearly not following him, I asked again what he was talking about. He looked at me with both eyebrows raised and said "You can't call them panties. Panties are lingerie. My not-yet-two-year-old daughter does NOT wear lingerie. Call them undies or underwear. Don't say panties!!"

After hearing the explaination, I rolled my eyes, threw my hands in the air and walked away trying my hardest not to laugh. I was unsuccessful.

Mmmm Mmmm Monday: Vegetarian Baked Ziti

We are definitely a family of meat eaters, but we do have friends who are vegetarians, so I always like to have a few meatless recipes on hand to make on the occasions when they come for dinner. Here's one of my favorites.

Vegetarian Baked Ziti
2 Tablespoons olive oil
1 pkg stir fry mix, thawed (I got an Italian blend instead of Terayaki or any of the other with an Asian feel. The Italian blend was perfect!)
28 oz chunky spaghetti sauce
16 oz ziti
2 cups shredded mozzerella cheese, divided
1/2 cup grated parmesean cheese
1/3 cup sun-dried tomates (optional)

In a large saucepan, heat oil over medium-high heat. Add stir-fry mix; cook, stirring until softened. Add spaghetti sauce, bring to a boil. Remove from heat.

Heat oven to 350*. Cook pasta according to box, drain, but don't return to heat. Add sauce, 1.5 cups of mozzerella cheese, parmesean cheese, and tomates. Mix well. Spoon into baking dish and sprinkle with remaining mozzerella cheese. Bake 20 minutes or until heated through and cheese is melted.

Once again, I have been a bad blogger. And once again I have an excuse :)

Honestly, nothing blog-worthy really happened last week. We left on Thursday and headed down to Florida for the weekend, to attend my niece's 2nd birthday party. (She's 2 today- Happy Birthday Gianna!). We stopped off in Savannah,GA to have dinner with some friends there, and ended up staying overnight because the weather was horrific. We left on Friday morning and went to Daytona to stay with the in-laws. Hubby golfed and I hung out with the kids by the pool. Saturday was spent driving to West Palm Beach and attending the birthday party, and of course watching the NCAA Final Four. Both my teams won, so now I'm going to be torn tonight during the finals! Sunday morning we woke up early to drive back to Daytona so that hubby & his dad could squeeze in another round of golf. After a yummy turkey dinner, we got in the car and battled the elements to drive back home to Charleston. Now it's spring break and I'm trying to entertain my children indoors because, you guessed it, it's raining.

Oh, and I left my camera down in West Palm Beach (Eeeeeek!!!) so my posts will be picture-less until I get it back. Hopefully it'll be here in a couple days because my momma promised she'd priority mail it to me today. I need it for the Easter egg hunt on Saturday!!

Mmmm Mmmm Monday (A day late-sorry!): Easy Chicken Cordon Bleu

This is a super easy recipe that is really yummy! There's not really a set amount of ingredients-it all depends on how many you're feeding. You can use any type of cheese you like...I lean towards provolone. But American cheese works too!

Chicken Cordon Bleu

Chicken breasts
Ham Slices
Cheese slices
Olive oil, or butter
Bread crumbs

Pound and flatten chicken breasts. Place a ham slice and a cheese slice on top. Roll up. Roll in olive oil and crumbs and base for 35 minutes at 350*.

Over the weekend we went to the circus, thanks to an email we recieved with vouchers for free admission for military members and their families. So we packed up the kids and headed to the Big Top for some free family fun!
